Cozy up in the morning with your favorite drink of choice and a paleo biscotti- you wont regret it!

Theres nothing like a fresh cup of warm matcha or hot cocoa in the morning. I love these biscottis so much because they’re perfectly sweetened with coconut sugar and dipped in my favorite paleo chocolate. They brighten my morning by waking up to a sweet treat each day!

Because its Christmas week I may or may not enjoy these multiple times a day… they’re that good! These are paleo, vegan and gluten free- so they are easy on your stomach too.

How do I make a Paleo Biscotti?

Making a biscotti can be stressful at first. Start by making your dough and mixing until it gets hard to mix. Once your dough is hard you roll it out to about 11 inches long and 2 inches wide. It should be a rectangle shape. Once you have it on your baking pan you bake it for about 20 minutes. You want to make sure when you are cutting your biscottis that they’re cooled, so I always put my cooked cookie log in the fridge for an hour to cool. Once cooled you slice your biscottis, then bake each side for 10 minutes each at 275F and then wait until they’re cooled to dip in your favorite paleo chocolate!

CHOCOLATE DIPPED PALEO BISCOTTI

Does it keep? eat fresh for 3 days, freeze for up to 2 months.

Ingredients for base

  • 1 3/4 cup + 1 tbsp almond flour

  • 2 tbsp tapioca

  • 1/4 cup + 1 tbsp coconut sugar

  • 1 teaspoon baking powder

  • 1/4 tsp almond extract

  • 3 tbsp water

Directions

  1. Preheat your oven to 350F and make your dough by adding all of the ingredients above.

  2. Once your dough is made roll into a log 11’’ long and 2’’ wide. Pat down your dough to keep it thick but flatten it.

  3. Bake this for 20 minutes. Once out of the oven and semi cooled, place in the fridge for an hour or until its fully cooled.

  4. Cut your biscotti slices. You can do this in a line or horizontal, totally up to you! You should have anywhere from 10-12 biscotti total.

  5. Preheat the oven again to 275F and place your biscotti on its side for 10 min, then flip and cook the other side. Once it comes out of the oven and its cooled dip into a chocolate of your choice.
