Salads are my go-to in winter. As the temperature drops and the days get shorter, it can be tempting to reach for heavy, comforting foods during the winter months. But just because the weather is cold, it doesn't mean your diet has to suffer. In fact, a hearty winter salad can be just what you need to stay healthy and energized throughout the season.
Cozy Winter Salad
Ingredients
- 1 cup kale
- 1 sweet potato roasted
- 1/4 c roasted carrots
- Handful of pomegranate seeds
- 1/2 Grapefruit
- Locally grown microgreens
- Salmon
- Tahini dressing (1/4 c tahini, 1 tsp ACV, water)
Instructions
- Mix all of the ingredients together and enjoy!
