paleo pad thai
If you know me, you know I am obsessed with pad thai. So I of course had to make my own healthy spin on my favorite dish. Ps: The sauce is everything!!

There’s nothing I love more than a warm bowl of pad thai, but since being diagnosed with celiac, i’ve had to sacrifice my favorite dish. There’s one spot in Fort Lauderdale that serves gluten-free pad thai, but the sauce is waaaay too oily for me!
This bowl was perfectly crafted with all of my favorite things. I made the sauce simple- because, let’s face it.. no one wants to spend $100 on fancy fish sauce and other ingredients. Too many recipes have unrealistic ingredients or will leave you heading home from the grocery store with a dent in your bank account, but this pad thai is not that!
Feel free to add more veggies to this or swap the noodles for something else, either way you neeeeed to try this!
Paleo Pad Thai
Ingredients
- 1 bag of noodles (i used palmini but any noodles should work!)
- 1 head broccoli chopped
- 3 carrots chopped
- 1 red bell pepper chopped
- 1 cup protein (i used ground chicken)
- 1/4 cup creamy peanut butter
- 1/4 cup water
- 1 tbsp apple cider vinegar
- 3 tbsp coconut aminos
Instructions
- cook veggies first over the stove, then add chicken and noodles
- mix sauce together and pour over noodle mixture and enjoy!
